It is time that you start turning your tables. This is where your reservations and wait list come into play. The problem is, your reservations are in a spiral notebook and your wait list is on a piece of paper. Your hostess is absolutely guessing as to the wait time and quoting 30 minutes to everyone who walks in. Your next turn of your restaurant is in severe danger of going out the door. The potential diners put their name on the wait list, turn around and immediately activate their phone’s search engine and ask for “restaurants near me”. What they are looking for is a restaurant that is within 5-10 minutes with open seating and no wait. Today’s restaurant guest is not as patient as diners in year’s past. They are too tech savvy and understand that there may be a restaurant with an open table just a few minutes down the road. If your restaurant does not properly manage reservations and a wait list you could easily miss out on diners who simply go down the street. Restaurant owners have long ago recognized the increase in speed of service and accuracy of orders that is gained through having a printer in the kitchen. What may not be so apparent is the amount of theft that is stopped by having printers in the kitchen. Yes, having printers at each major prep station will speed of service from the kitchen. An additional benefit not often immediately recognized by the restaurant owner is the theft that is stopped by requiring a printed ticket for every food item that leaves the kitchen. Having multiple printers in the kitchen just adds security to the restaurant operation. The same applies to bar operations as well. Requiring a printed ticket for every drink item prepared and served means that the item was properly rung up at the terminal. If there are multiple bars in operation then proper order flow can be managed by having multiple printers. When there are multiple printers in the operation then the POS system must handle the complex routing of items within the kitchen and bar operations. Each item must be routed to the correct printer and the entire order printed on an Expediter printer for the combining of items from the multiple prep areas into a tray of food for the table. There are times when the restaurant does not fully staff each prep area or bar in the operation. This is done to properly manage labor and match labor costs to the sales needs of the operation. In some cases restaurant operators will require that orders be re-routed based upon whether a prep station is staffed or a bar is open. Unfortunately, a lot of POS applications cannot handle this complex routing or re-routing by day of the week or time of the day. Some restaurants have even resorted to taking partial orders to help with the pace of the meal. An example would be asking for an appetizer order and then coming back to the table to take the entrée order. As a diner I have always found this method a bit awkward even though I knew what the server was attempting to do. The real problem is the kitchen being slammed with the entire order at once from several different tables and then being expected to remember when to drop the items to pace every meal in the restaurant. It is unrealistic to expect the kitchen staff to be able to meet this demand. The same can be said for the wait staff if they are expected to not enter items into the POS system until they are ready for them to be started. It is totally unfair for the wait staff to recognize the cook times for all the items on the menu and then send the order when it is time to start cooking. There is also the challenge of different items taking different times to cook. Sending the entire order to the kitchen and expecting all entrée items to come out together is simply unrealistic. The Solution Let technology help. Aldelo Express has the ability to allow for items to be placed on hold and sent to the kitchen in an orderly fashion so the kitchen is not slammed and overwhelmed. Manual Hold and Fire – Servers can place any item on hold and then return to the terminal to manually release the hold as the table is ready for the next meal course. This allows the server to watch the table and pace the meal as the needs of the customer are determined. Timed Hold and Fire – When placing items on hold the server has options available to them for a timed hold/fire for the individual items being held. The system will display the current time and allow the server to determine the exact time that they want the item released to the kitchen. The server also has the option to place the item on hold for a specific length of time. A list of preset minutes is displayed to make selection of the hold time more convenient. Setting an automatic time to fire the item to the kitchen is also a fail-safe option in case the server is busy and forgets to return to the terminal to manually fire the item. Entire Order Can be Entered at Once – This now allows the server to take the entire order when the customer is ready. The system will pace the items to the kitchen and insure that the customer’s dining experience is not rushed. If needed, the entire order can be paused or placed On Hold while the server goes back to the table to ask a question. The server does not have to leave the order open on the terminal or send it before they are ready. Placing the entire order On Hold gives them the time they need to get it right. The Conclusion Most POS systems struggle with the implementation and application of this feature. Some may have the ability to hold and item and manually fire the item.
